This is a family favorite of Nancy’s. But, she didn’t have the recipe in any of her collections. Sister Jane came to the rescue multiple times because we kept losing it!
Nothing like Texas, Kansas City, Carolina, or Memphis barbecue sauces. But it is good. Basic recipe with common pantry items. Not too spicy, but watch the vinegar and lemon juice quantities – too much and they do adjust the flavor. Sauce can be used as a flavoring with noodles or even with mashed potatoes. Works best with dark meat pieces of chicken.
Mum’s BBQ Chicken
Ingredients
- ½ cup butter melted
- 1 teaspoon salt
- ½ cup vinegar
- 1 ½ teaspoon sugar
- 1 teaspoon dry mustard
- clove garlic minced
- ¼ cup Worcestershire sauce
- 2 lbs chicken breasts, thighs and legs
- ½ cup ketchup
- 2 teaspoon lemon juice
Instructions
- Preheat oven to 350°.
- In a medium-size bowl, blend all ingredients except for chicken.
- Place chicken in a single layer in a greased baking dish.
- Pour sauce over chicken.
- Cover; cook for 2 hours in preheated oven.
