Potato Salad – Nancy’s Version

Nearly everybody loves potato salad.  This combination and portions has been a guarded family secret but now we are sharing so everybody can enjoy.  A sample of how good this is shown by this story.

Joe’s spoon is on the right! The rest of us had to use the 1/2 teaspoon.

We were entertaining friends a few years ago and I had made a large bowl of my potato salad. Joe and Debbie High were among the guests. They had been at our home several times and know where things are in the kitchen and know they can look for things themselves if needed. I had just placed the bowl of potato salad on the counter with a large spoon for serving. Next thing I know Joe is looking in the kitchen drawers looking for a spoon for the potato salad. I said “There is already one in the bowl.” Joe replied something to the effect of of “Oh no! That is MY serving spoon. I am getting one for the rest of you.” Joe also wanted leftovers to take home.  He really like it and made sure to go back for seconds early.  Of course, there were no leftovers by the end of the evening.   We hope there are no leftovers either when you serve this dish.

This will always be a special memory as Joe is no longer with us. RIP (hope they have good potato salad in heaven) “First Dude” Joe High.

Potato Salad – Nancy’s Version

This has been a guarded family secret recipe.

  • 2 ½ lbs potatoes, peeled, cooked, chunked
  • 5 tablespoons Hidden Valley Ranch dressing dried mix
  • 1 cup celery chopped
  • 8 eggs hard boiled and chopped
  • 1 cup green onions sliced including white and green portions
  • 1 ½ to 2 cups mayonnaise


  • Mix potatoes and dried Hidden Valley Ranch dressing mix.
  • Add celery, onions, eggs. Mix to evenly distribute.
  • Add mayonnaise, salt and pepper. Mix.
  • Place in refrigerator to meld. Suggest 12 hours.
