Potato Salad - Nancy's Version

This has been a guarded family secret recipe.

Ingredients

  • 2 ½ lbs potatoes, peeled, cooked, chunked
  • 5 tablespoons Hidden Valley Ranch dressing dried mix
  • 1 cup celery chopped
  • 8 eggs hard boiled and chopped
  • 1 cup green onions sliced including white and green portions
  • 1 ½ to 2 cups mayonnaise

Instructions

  • Mix potatoes and dried Hidden Valley Ranch dressing mix.
  • Add celery, onions, eggs. Mix to evenly distribute.
  • Add mayonnaise, salt and pepper. Mix.
  • Place in refrigerator to meld. Suggest 12 hours.
