Ingredients
- 2 lbs ground beef lean
- 2 cups onion chopped
- 2 cloves garlic minced
- 28 oz tomatoes two cans
- 15 oz pinto bean 2 cans, rinsed and drained
- 8 oz tomato sauce 1 can
- 4 oz green chilies 1 can chopped
- 2 tablespoon chili powder
- 2 teaspoon cumin
- 1 teaspoon salt
- ¼ teaspoon red pepper ground
- sour cream optional
- green onions chopped ,optional
Instructions
- in a 4-quart oval casserole, place beef, onion and garlic. Place dish on glass tray. Microwave at high (10) for 8 to 10 minutes until meat is browned, stirring twice to crumble beef. Drain well.
- Add tomatoes, beans, tomato sauce, chilies, chili powder, cumin, salt and pepper to meat mixture; stir to combine. Cover. Return to microwave and cook until hot and bubbly. Stir in the middle of the time to ensure uniform cooking of the dish. Ladle into bowls, and top with sour cream and onions, if desired.
