Ingredients

  • ½ cup green bell pepper chopped
  • ½ cup tomato chopped
  • ¼ cup onion chopped
  • 2 eggs
  • ½ cup heavy whipping cream
  • ¼ teaspoon salt
  • teaspoon pepper
  • 1 package 5.1 oz Old El Paso™ Flour Soft Tortilla Mini Bowls (12 Count)
  • ¼ cup cheddar cheese shredded (1 oz)

Instructions

  • Heat oven to 350°F. Line cookie sheet with foil.
  • In 8-inch nonstick skillet, cook bell pepper, tomato and onion 3 to 5 minutes to soften. In medium bowl, beat eggs, cream, salt and pepper with whisk.
  • On un-greased cookie sheet, place bowls. Put 2 teaspoons cooked vegetables and 1 teaspoon cheese in bottom of each bowl. Pour 1 1/2 tablespoons egg mixture in each bowl. Bake 15 to 18 minutes or until knife inserted in center comes out clean.

Vary your cheese makes these different and not repetitive.
