Taco Meatloaf

Ingredients

  • 1 ½ lb. of lean ground beef
  • 2 eggs
  • 1 tablespoon. taco seasoning
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 2 cup crushed tortilla chips
  • 1 cup yellow onion chopped
  • 1 cup orange bell pepper chopped
  • 3 garlic cloves
  • 10 oz. enchilada sauce 1 can
  • ¼ cup shredded Mexican cheese

Instructions

  • Mix ground beef, eggs, tortilla chips, seasonings, onion, pepper and garlic together.
  • Shape meatloaf into a heart and put in a glass or ceramic dish.
  • Pour half of enchilada sauce on top and around the meatloaf.
  • If you are using a conventional oven, preheat oven to 350 degrees F and bake for 1 hour.
  • Sprinkle cheese on top and bake for 3 more minutes.
  • Lightly heat the rest of the enchilada sauce and serve on the side of the Taco Meatloaf, along with sour cream, guacamole and salsa.

Notes

I use and Advantium® GE profile microwave, if you have one, Set oven to U=4 L=4 M=6 and cook for 30 minutes.  If using a conventional microwave I would guess medium power for about 30 minutes.
