Dutch Oven Pork Lion Roast

Ingredients
  

  • 3 lb boneless pork loin roast
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¾ cup beef or chicken broth
  • all-purpose flour for the gravy

For the glaze:

  • 1 tablespoon olive or avocado oil
  • 1 tablespoon soy sauce
  • 2 tablespoons dijon mustard
  • ½ tablespoon apple cider vinegar
  • 1 teaspoon chili sauce

Instructions
 

  • Combine the glaze ingredients in a small bowl or ramekin and mix well. Then, set aside.
  • Preheat oven to 350°F
  • Combine dry rub seasonings and rub over the pork loin.
  • Heat a tablespoon of avocado oil in the dutch oven on the stove top and sear the roast on each side, including both ends. (about 1 minute per side)
  • Add broth to the pot, then drizzle the glaze over top of the roast.
  • Bake for 1 hour & 15 minutes uncovered or until internal temp registers 145°.
  • Remove to a cooling rack to rest for 5 minutes.
  • To make the gravy, place the pot back on the stove top over medium-low heat and add 1-2 tablespoons of flour. Use a wooden spatula to scrape up any bits stuck to the bottom and stir occasionally. Once the gravy starts to thicken (it doesn’t take very long), transfer it to your gravy bowl.

Notes

  1. The key is in a good sear at the beginning, and leaving the meat be.
  2. The glaze should be thin enough that it pours out of the container yet thick enough to stick to the roast’s sides.
    1. About 1/2 way through, check to ensure there is enough liquid, add more if needed.
