Creamy Smothered Corn on the Cob
Ingredients
- 4 ears of corn shucked, 1 or 2 more is possible
- ½ stick butter
- 3 teaspoons flour
- 2 tablespoons garlic minced
- ½ cup heavy cream or milk
- 2 teaspoons old bay seasoning
- 1 tablespoons Ranch Seasoning
- 3 tablespoons parsley chopped fresh
- 3 tablespoons Parmesan grated
Instructions
- On medium low heat melt the butter and add corn to the pan. Cook for 3 to 5 minutes, then remove the corn and set aside.
- Add flour to the pan and whisk for about one minute, then add garlic, heavy cream, old bay, ranch seasoning, and parsley. Simmer on low until sauce is thickened. If the sauce is too thick at a little bit more milk or cream.
- Add the corn back into the pan and continue simmering turning the corn every minute until all sides are well coated, and absorbing the sauce.
- Top with Parmesan cheese, more old bay and parsley.
Notes
If you want you can shave the corn and serve this as a family style side dish (perfect for a pot luck)
It also makes a great sauce for chicken or shrimp tacos.
