This recipe uses fresh ginger and pineapple juice to add bright heat and tang to the sweet, teriyaki-like fresh huli huli sauce that coats the chicken wings and pineapple slices in this recipe. The sauce helps the wings get smoky-sweet and retain a delicious juicy bite. If using a sheet pan, turn the pieces over about half way thru cooking.

Ingredients

  • 1 cup pineapple juice unsweetened
  • 1 cup chicken broth
  • ½ cup soy sauce
  • ½ cup brown sugar packed light
  • cup ketchup
  • 2 teaspoons ginger grated peeled fresh
  • 1 ½ teaspoons garlic finely chopped
  • ½ teaspoon kosher salt
  • 1 each pineapple peeled and cut into 1/2-inch slices, approximately 3-pound) fresh

Instructions

  • Prepare the chicken wings and see basic chicken wing recipe.
  • In a bowl, mix the ingredients.
  • Apply the mixture to the chicken wings and serve.

Notes

Originally this was used as a marinate, however the sugar causes it to burn too easily.
