Chicken Pepperoni
A tantalizing fusion of succulent chicken and savory pepperoni, creating a symphony of flavors that will leave you craving more.
Ingredients
- 4 each chicken breasts boneless, skinless, 1/2 thick, pounded
- to taste salt & pepper
- 1 cup flour
- ½ teaspoon garlic powder
- 1 ½ teaspoons chili powder
- ½ teaspoon Italian seasoning dryed
- ½ teaspoon cumin
- ½ teaspoon paprika
- ½ teaspoon onion powder
- ¼ teaspoon pepper white
- 2 teaspoon red pepper flakes Optional
- 2 tablespoons butter
- 2 tablespoons olive oil or canola oil
- ¼ cup red wine
- 1 cup onion chopped, about 1/2 medium onion
- 1 cup red pepper, sweet diced into ½ inch pieces, about 1 pepper
- 1 jar spaghetti sauce or homemade if you have a favorite recipe
- 1 ½ cups chicken broth or water
- 8 oz pasta your choice of shape, thin spaghetti or penne are my choices
- 16 pieces pepperoni 4 per chicken breast
- 16 oz mozzarella shredded, can use freshly sliced
Instructions
- Preheat oven to 350°.
- Mix all dried seasonings with flour. Dredge chicken breasts.
- In a large deep ovenproof frying pan heat butter and oil over medium-high heat, stir to mix. When hot, sear pounded chicken breast ( that have been dredged in flour with spices) until lightly browned on each side. Remove to a plate or baking dish, cover, set aside
- Remove pan from heat (do not drain oil and butter), add wine carefully, let steam subside and stir and scrape bottom of pan.
- Return pan to heat and lower to medium. Toss in onion, pepper. Saute for 5 minutes, stirring occasionally. Add spaghetti sauce, water or broth and uncooked spaghetti.
- Stir well to mix. Nestle browned chicken breasts down into pan, making sure that they aren't overlapping.
- Pop into fully heated 350° F oven and bake, uncovered for 30 minutes.
- Top each piece of chicken with three slices of pepperoni and a large handful of cheese using all of it. Pop back into over and bake/broil until cheese has fully melted, about 5-8 minutes. Watch carefully as all oven behave differently.
