Cabbage Soup
Very low calorie soup. alleged to be good for losing weight. Eat all you want, as many times a day as desired.
Equipment
- Stock Pot
Ingredients
- ½ Head cabbage can use up to 1 full head
- 6 each onion
- 2 each bell peppers green
- 1 bunch scallions aka green onions
- 1 bunch celery
- 6 each carrots optional
- 16 oz green beans optional
- 1 can V-8 or tomato juice
- 28 oz crushed tomatoes or diced
- 1 package onion soup mix suggest Lipton's
- to taste black pepper
- to taste herbs
- 1 to 2 cube bouillon beef or chicken, or 1/2 cup balsamic vinegar , Optional . If desired you can use 2 cubes of bouillon.
Instructions
- Chop vegetables, combine all ingredients in a stockpot, add enough water to cover.
- Boil 10 minutes.
- Reduce to a simmer and continue cooking until vegetables are tender.
- Makes about six quarts.
