Cabbage Soup

Very low calorie soup. alleged to be good for losing weight. Eat all you want, as many times a day as desired.

Ingredients

  • ½ Head cabbage can use up to 1 full head
  • 6 each onion
  • 2 each bell peppers green
  • 1 bunch scallions aka green onions
  • 1 bunch celery
  • 6 each carrots optional
  • 16 oz green beans optional
  • 1 can V-8 or tomato juice
  • 28 oz crushed tomatoes or diced
  • 1 package onion soup mix suggest Lipton's
  • to taste black pepper
  • to taste herbs
  • 1 to 2 cube bouillon beef or chicken, or 1/2 cup balsamic vinegar , Optional . If desired you can use 2 cubes of bouillon.

Instructions

  • Chop vegetables, combine all ingredients in a stockpot, add enough water to cover.
  • Boil 10 minutes.
  • Reduce to a simmer and continue cooking until vegetables are tender.
  • Makes about six quarts.
