Slow Cooker Cheesy Seafood Dip

Ingredients

  • 1 lb Crab chopped
  • 1 lb cheese, melting Velveeta works, cut into cubes
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1 small onion finely diced
  • 1 each bell pepper finely diced, red if possible
  • 2 cloves garlic minced
  • 1 jalapeño seeded and minced (optional for an extra kick!)
  • 1 teaspoon creole seasoning
  • ¼ teaspoon cayenne pepper optional, for the spice enthusiasts
  • to taste Salt and pepper
  • 1 tablespoon parsley or green onions for garnish

Instructions

  • Spray your slow cooker with a little bit of non-stick spray or butter
  • Toss your diced cheese, crab,sour cream, and mayonnaise into the slow cooker. Give it a brief stir.
  • Sauté your onions and bell pepper on the stove until they soften a bit, adding the garlic towards the end.
  • Add your veggies to the slow cooker along with the creole seasoning, cayenne (if you're daring), and that optional jalapeño.
  • Adjust your slow cooker to low, let it cook for about 2 hours. Stir occasionally .
  • Season with salt and pepper to your taste, and give it a good final stir.
  • Pour the dip into your favorite serving bowl, garnish with chopped parsley or green onions, and serve it up with your grazing assortment of sides.
