Slow Cooker Cheesy Seafood Dip

- 1 lb Crab chopped
- 1 lb cheese, melting Velveeta works, cut into cubes
- ½ cup sour cream
- ¼ cup mayonnaise
- 1 small onion finely diced
- 1 each bell pepper finely diced, red if possible
- 2 cloves garlic minced
- 1 jalapeño seeded and minced (optional for an extra kick!)
- 1 teaspoon creole seasoning
- ¼ teaspoon cayenne pepper optional, for the spice enthusiasts
- to taste Salt and pepper
- 1 tablespoon parsley or green onions for garnish
Spray your slow cooker with a little bit of non-stick spray or butter
Toss your diced cheese, crab,sour cream, and mayonnaise into the slow cooker. Give it a brief stir.
Sauté your onions and bell pepper on the stove until they soften a bit, adding the garlic towards the end.
Add your veggies to the slow cooker along with the creole seasoning, cayenne (if you're daring), and that optional jalapeño.
Adjust your slow cooker to low, let it cook for about 2 hours. Stir occasionally .
Season with salt and pepper to your taste, and give it a good final stir.
Pour the dip into your favorite serving bowl, garnish with chopped parsley or green onions, and serve it up with your grazing assortment of sides.
