Chicken with Mushrooms and Swiss Cheese

A family favorite. Will be one of yours too!

Ingredients

  • 8-10 chicken tenderloins
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 2 tablespoons paprika
  • 1 tablespoons kosher salt
  • 1 tablespoons ground black pepper
  • 2 cups Panko breadcrumbs
  • 3 cups mushrooms sliced – white baby Bella or portabella
  • 2 cups Swiss cheese 7-10 slices or 2 cups shredded

Instructions

  • Preheat oven to 375°F.
  • Remove thawed chicken tenderloins.
  • Place all ingredients in a bowl (or Ziplock bag) and toss together.
  • Place seasoned chicken tenders on a baking sheet in single layer. Use two baking sheets if necessary.
  • Bake for 20-25 minutes or until internal temperature of largest tender is 165°F.
  • While chicken is baking, sauté mushrooms in oil of your choice.
  • When chicken is done, top with mushrooms and cheese. Return to oven until cheese is melted.
