3cupsmushrooms sliced – white baby Bella or portabella
2cupsSwiss cheese 7-10 slices or 2 cups shredded
Optional Stuffing on top
6ozseasoned stuffing mix in a box
¼ cupParmesan cheeseshredded , Optional
4tablespoonsbuttersalter, melted, Optional
to tasteparsleychopped for garnish, Optional
Instructions
Preheat oven to 375°F.
Remove thawed chicken tenderloins.
Place all ingredients in a bowl (or Ziplock bag) and toss together.
Place seasoned chicken tenders on a baking sheet in single layer. Use two baking sheets if necessary.
Bake for 20-25 minutes or until internal temperature of largest tender is 165°F.
While chicken is baking, sauté mushrooms in oil of your choice.
When chicken is done, top with mushrooms and cheese. Return to oven until cheese is melted.
Optional items: In a medium bowl, mix the stuffing, shredded Parmesan cheese and melted butter until the crumbs are evenly coasted. Sprinkle this mixture over the top of the casserole.
