Pulled Pork Casserole

This was surprisingly good. Easy and relatively quick.

Ingredients

  • 30 oz frozen shredded hash browns bag
  • 1 CUP whole kernel corn
  • ½ each diced onion
  • ½ each bell pepper
  • 1 each grated jalapeños add an extra one if you like your a little spicier
  • 2 tablespoons melted butter
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups shredded cheese I used Colby Jack, be creative
  • 1 cup BBQ sauce
  • green onions , chopped optional
  • 1 dollop sour cream optional
  • 1 lb pulled pork previously cooked

Instructions

  • Preheat oven to 400ºF. Coat a 9×13 casserole dish (3 qt) with nonstick cooking spray. Set aside.
  • In a large bowl, combine hash browns, corn, onion, bell pepper, jalapeños, butter, salt, pepper and 1 cup of the cheese. Pour into prepared baking dish. Bake for 20 minutes.
  • Toss pulled pork in sauce. Spread pulled pork mixture over hash brown mixture and top with remaining cheese. Pop back in the oven for 20 minutes more baking time for the perfect cheese melt.
  • Allow to cool for 5 minutes.
  • Spoon and serve! You could even add a dollop of sour cream and a sprinkle of diced green onions on top if you like!
