1lbpulled porkpreviously cooked
Instructions
Preheat oven to 400ºF. Coat a 9×13 casserole dish (3 qt) with nonstick cooking spray. Set aside.
In a large bowl, combine hash browns, corn, onion, bell pepper, jalapeños, butter, salt, pepper and 1 cup of the cheese. Pour into prepared baking dish. Bake for 20 minutes.
Toss pulled pork in sauce. Spread pulled pork mixture over hash brown mixture and top with remaining cheese. Pop back in the oven for 20 minutes more baking time for the perfect cheese melt.
Allow to cool for 5 minutes.
Spoon and serve! You could even add a dollop of sour cream and a sprinkle of diced green onions on top if you like!
