Pineapple Grilled Cheese

This takes your grilled cheese up a notch or two. The addition of the pineapple and soy sauce adds just the sweet and salty punch when added to the two types of cheese , really is delightful.
Ingredients
- 6 slices Canadian bacon or ham
- 3 pineapple rings fresh pineapple rings, thinly sliced (I didn’t have slices, so used tidbits – mmm)
- 2 ½ tablespoons butter divided
- 1 teaspoon brown sugar
- 1 tablespoon soy sauce
- 4 slices sourdough bread
- 8 slices Havarti
- 2 oz. 4 slices sliced Gruyere any white cheese works, I used three kinds
Lightly spray skillet with cooking spray and heat over medium-high heat. Fry Canadian bacon, 2 min per side, remove from pan, and set aside.
Lower heat to medium and melt 1 tablespoon of the butter. Add pineapple and sprinkle sugar and soy sauce on top. Caramelize pineapple, cooking about 4 min per side. Set the pineapple aside and clean pan.
Spread the remaining butter on one side of each slice of sourdough.
Layer the 2 sandwiches, starting with the butter side down, with 2 slices of Havarti, then 3 slices of bacon, half the Gruyere, 1 ½ slices of pineapple, and 2 more slices Havarti. Topped off with the plain side of the remaining slices of bread.
Heat the pan over medium heat and cook the grilled cheese covered until golden and crispy with melty cheese, about 4 min per side.
