Frozen Ice Cream Pineapple Treat

Cool delicious summer time treat.
- 3 oz ice cream 1 big scoop of vanilla ice cream
- 4 oz. pineapple juice
- 2 cups pineapple frozen
Add ingredients to a blender/food processor.
Blend until smooth.
Add the mixture into a bowl, you can get fancy use a piping bag with a star tip when dishing it into the bowl.
Didn’t really understand 1 big scoop. We used 5 regular ice cream scoops and the same quantity of juice and pineapple. Great Flavor! Too much and when we put the balance in the freezer and went back a few days later – too hard and not really enjoyable.
Would suggest for two adults, decent appetites and wanting a neat cool treat
2 scoops of vanilla ice cream
3 oz. of pineapple juice
1 1/2 cups of frozen pineapple
How to get the frozen fruit into manageable sizes for the blender/food processor?
I have a silicone muffin pan (or regular with paper cups) that I used for freezing small pucks of fruit. After freezing they can be transferred to a Ziploc for easy use.
Amazingly easy to accomplish, if fruit is already frozen, in about 5-10 minutes after dinner or before bed. We used a no sugar added no-name vanilla ice cream.
Some thoughts of modifications or alternative we are going to try.
• Mangoes
• Mandarin Oranges
• Strawberries – only so so, maybe berries weren’t ripe or sweet enough
• Any frozen fruit - blue berries, raspberries, apricots, peaches, the list goes on and on.
Watch out however, this is so good but “brain freeze” is a possibility eating this stuff.
