Foiled "Boil"

An Alternative way to do a Shrimp - Seafood Boil, Flavors seem more intense. This method allows much easier customization, in content, spice level, even when it is ready to be served. Our preferred method. See "Jalapeno Smoked Sausage version of a shrimp boil" for different ingredients.

Ingredients

  • 1 lb sausage sliced, of choice
  • 2 each corn on the cob, cut in half
  • 2 lbs potatoes chunked
  • 1 each bell pepper any color, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon spice, Cajun or creole
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 lbs shrimp

Instructions

  • Preheat your oven or grill to 400°F (200°C).
  • Prepare four sheets of heavy-duty aluminum foil, each about 12x12 inches in size.
  • In a large mixing bowl, combine the sliced sausage, corn on the cob chunks, diced potatoes, and sliced bell pepper.
  • In a separate small bowl, mix the olive oil, Italian seasoning, garlic powder, onion powder, salt, and pepper. Pour this mixture over the sausage and vegetable mixture in the large bowl. Toss everything together until the sausage and vegetables are evenly coated with the seasoning and oil.
  • Divide the sausage and vegetable mixture evenly among the four sheets of aluminum foil, placing it in the center of each sheet.
  • To fold the foil packets: Bring two opposite edges of the foil up to meet in the center, then fold them together down a few times to create a tight seal. Next, fold the remaining two open edges tightly towards the center to complete the foil packet. Ensure there are no gaps or openings for steam to escape.
  • Place the foil packets directly on the oven rack or on the grill grates and cook for either 15 mins on grill or 30 mins in oven, or until the potatoes are tender and cooked through.
  • Carefully remove the foil packets from the oven or grill using oven mitts or heat-resistant gloves, as they will be hot.
  • Let the packets cool slightly before carefully opening them. Be cautious of the hot steam when opening.
  • Serve the delicious Sausage & Potatoes Tin Foil Packets straight from the foil or transfer the contents to a serving dish.

Notes

You can of course add additional seafood similar to the other boil recipe, such as crabs, mussels, or whatever you like.
