The Original KFC was dropped from their menu to the disappointment of many. If your are among that group, we hope you will enjoy this one. Coleslaw is a classic side dish that pairs perfectly with a wide range of main dishes. One of the most popular coleslaw recipes is the KFC imitation coleslaw, which is a copycat version of the famous coleslaw served at Kentucky Fried Chicken. This coleslaw is known for its creamy, tangy, and slightly sweet flavor, and is a favorite among coleslaw lovers.This coleslaw is easy to make and can be prepared in large batches, making it perfect for feeding a crowd.
- 14 oz coleslaw mix 14-ounce bag coleslaw mix traditional mix of green cabbage and carrots
- ½ onion small
- 2 tablespoons sugar plus 2 teaspoons
- ¼ cup mayonnaise plus 2 tablespoons
- 2 teaspoons vinegar apple cider
- ⅛ teaspoon mustard powder dry
- Pinch paprika
- Kosher salt
Working with half of the bag at a time, chop the coleslaw mix into 1/8-inch pieces (about the width of the carrots).
Transfer to a large bowl.
Dice enough of the onion into 1/8-inch pieces to yield 1/4 cup.
Transfer to a fine-mesh strainer and rinse with cold water for 1 minute to soften the flavor.
Gently wring out the onions in a paper towel and then stir into the coleslaw mix.
In a pint jar or other container with a tight-fitting lid, stir together the sugar and 3 tablespoons water until the sugar dissolves a bit.
Add the mayonnaise, vinegar, mustard powder, paprika and 1/2 teaspoon salt, put on the lid and shake vigorously until completely combined.
Stir the dressing into the coleslaw, then set aside for 10 minutes to marinate and soften, stirring a few times.
Add more salt, if needed.
