cucumber, sliced into thin lengths, removing the seeded middle
green onions, sliced
red chili, as many as you like, sliced (optional)
butter, (optional)
mayonnaise (optional)
soy sauce or hot sauce (optional)
Instructions
Cook, by your method, the port butt. See notes below.
Once the pork has cooled, shred.
To pickle the carrot, put it in a bowl with the lime juice and sugar. Mix well and set aside.
Prepare all the garnishes. Wash the cilantro, and slice the cucumber, green onions and red chilies.
Assemble the sandwich.
Warm approximately 1 cup of shredded pork for each sandwich. Microwave or oven.
Cut the roll into two, then slice each one in half lengthwise, remove the middle bit of dough and spread with butter and mayonnaise, if using.
Stuff the hollow roll with the prepared shredded port butt, garnishes, and carrot pickle.
Add soy sauce and hot sauce to taste.
Notes
Prepare Port Butt in the manner you desire - smoker, slow-cooker, or bake. Use the spices of your choice. Shred for sandwich prep. This can be done ahead. Warm when assembling sandwich.What is castor sugar? Caster, or castor, sugar is a type of fine granulated sugar that's widely available in the United Kingdom.
