Amish Friendship Bread

Cinnamon Amish Friendship Bread is hard to resist. Makes two loaves

Ingredients
  

  • 1 cup oil
  • 3 each eggs large
  • ½ cup milk
  • ½ teaspoon vanilla
  • 1 cup granulated sugar
  • 2 cups flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 ½ teaspoon baking powder
  • 2 teaspoons cinnamon
  • 2 instant vanilla pudding small boxes , 3.4 ounces each
  • 1 cup chopped nuts optional
  • 1 cup Amish Friendship Bread Starter (must be started > 10 days ahead)

Cinnamon Sugar Mixture:

  • ½ cup sugar granulated
  • 1 ½ teaspoons cinnamon

Notes

To make muffins, spray two muffin pans with cooking spray. Sprinkle the greased muffin cups with the cinnamon sugar mixture. Fill the muffin cups 2/3 full with batter. Bake at 425 for 5 minutes, then without opening the oven, reduce the oven temperature to 375 degrees and bake for an additional 13 minutes or until the top of the muffin bounces back when you touch it.
