Potato Salad – Nancy’s Version

Nearly everybody loves potato salad.  This combination and portions has been a guarded family secret but now we are sharing so everybody can enjoy.  A sample of how good this is shown by this story.

Joe’s spoon is on the right! The rest of us had to use the 1/2 teaspoon.

We were entertaining friends a few years ago and I had made a large bowl of my potato salad. Joe and Debbie High were among the guests. They had been at our home several times and know where things are in the kitchen and know they can look for things themselves if needed. I had just placed the bowl of potato salad on the counter with a large spoon for serving. Next thing I know Joe is looking in the kitchen drawers looking for a spoon for the potato salad. I said “There is already one in the bowl.” Joe replied something to the effect of of “Oh no! That is MY serving spoon. I am getting one for the rest of you.” Joe also wanted leftovers to take home.  He really like it and made sure to go back for seconds early.  Of course, there were no leftovers by the end of the evening.   We hope there are no leftovers either when you serve this dish.

This will always be a special memory as Joe is no longer with us. RIP (hope they have good potato salad in heaven) “First Dude” Joe High.

Potato Salad – Nancy’s Version

This has been a guarded family secret recipe.

Ingredients
 
 

  • 2 ½ lbs potatoes, peeled, cooked, chunked
  • 5 tablespoons Hidden Valley Ranch dressing dried mix
  • 1 cup celery chopped
  • 8 eggs hard boiled and chopped
  • 1 cup green onions sliced including white and green portions
  • 1 ½ to 2 cups mayonnaise

Instructions
 

  • Mix potatoes and dried Hidden Valley Ranch dressing mix.
  • Add celery, onions, eggs. Mix to evenly distribute.
  • Add mayonnaise, salt and pepper. Mix.
  • Place in refrigerator to meld. Suggest 12 hours.

    This was a favorite at our gatherings. I hadn’t read your tribute to the “First Dude” before, but I can picture him with “our spoons.” Thanks for sharing—great friends and great food.

      Some website tips:
      On the bottom of the recipe page, Spread the joy allows to share with friends. To see how it works, pick the email icon on one of the recipes and email it to yourself. I see you already used this for sharing Facebook.

      From the home screen, upper right. the magnifying glass, select it and then entry in the Search box, for example chicken, maybe a favorite ingredient like ginger.

      If you are using your phone or tablet to “cook” from , preparing the dish, on the recipe page below the ingredients and above the instructions, a Cook Mode switch is available to prevent your screen from going dark.
      Just above that is a Get Ingredients with Walmart, puts all the ingredients in a cart for you on the Walmart site. Then it easy to remove the ingredients your already have in your pantry. We don’t receive any kick back but was easy to include and helpful for some people.

      To adjust the number of servings to make, there are two ways to easily adjust. On the recipe page you can select 1x, 2x, 3x and it double or triple the recipe. OR you can click on the servings, and a slider will allow you to adjust the servings to your desired setting. Note when adjusting some strange unique quantities or measurements occur.

      The recipe print page also allows you to adjust the serving, using + / _ keys or direct entry.
      You can choose to print or not print the recipe image, Notes, and Nutrition label. Smaller, Normal, Larger allow you to adjust the font size. When printing it prints with the choices you make, so you can easily print for different serving totals.

      Penne Arribbiata (go lightly on the peppers till you acquire a taste for the spicier version)
      Chinese chicken salad (Inspired by Tau Tau Restaurant, Mountain View CA. according to our associate would took us there, our version is better than the original, the sauce is useful cooking agent to other dishes also)
